Potato and Bacon Frittata

What is a Frittata?

A frittata is a traditional Italian breakfast dish. They are similar yet slightly different than a quiche, with the biggest difference being that there’s no crust. You can make a frittata easily with eggs and dairy of your choice. You can mix in whatever ingredients you want to customize your frittata.

Why I Love Making Frittatas

This may be surprising – but I’m not the biggest fan of eggs. I used to be allergic when I was younger and I never quite got used to the texture. But I LOVE making frittatas. 

Frittatas are the ultimate adaptable dish when you want to make something healthy from scratch, but you don’t feel like going to the grocery store. Use whatever you can find in your fridge.

Not only was this frittata an easy meal to make, it’s also packed with protein. For mine, I used bacon, baby potatoes, onion, and parmesan cheese – all simple ingredients I had on hand at home.

Prepping Your Ingredients

For my frittata I chose to cook my bacon in the oven ahead of time, which I specify in the step-by-step instructions below. You can choose to bypass this preparation and cook your bacon in the skillet right before assembling your frittata.

I am always an advocate for less dishes, so I prepped my baby potatoes as well by baking them in the oven on the same pan as the bacon. The extra bacon fat adds flavor to the potatoes, and you don’t have to add any extra oil.

Customize Your Frittata

This is the ultimate meal to make with all of those leftover items that are in your fridge. Frittatas are made for creative combinations – so pick and choose your favorite flavors. You can’t go wrong with mixing and matching some of these items below.

VEGETABLES

  • Spinach
  • Broccoli
  • Bell Pepper
  • Tomatoes
  • Zucchini
  • Onion (I put this in mine!)
  • Fresh herbs like parsley, basil, chives, dill, or tarragon
  • Mushrooms
  • Scallions

MEAT

  • Prosciutto
  • Ham
  • Pepperoni
  • Salmon
  • Sausage

CHEESE

  • Feta
  • Fontina
  • Mozzarella
  • Cheddar
  • Swiss
  • Gruyere
  • Goat cheese

Make It a Meal

I served my frittata as a light dinner with a strawberry salad on the side. If you are looking for other ideas for dishes to serve with your frittata, here are some of my favorites:

  • Salads
  • Pancakes or waffles
  • Homemade bread
  • Soup

WHAT YOU’LL NEED:

  • 5 pieces of bacon diced
  • 1 bag of baby potatoes sliced in quarters
  • ¼ of one yellow onion diced
  • ½ tsp of freshly ground pepper
  • ½ tsp of kosher
  • 6 large eggs
  • ½ cup of heavy whipping cream
  • ¼ cup of your favorite cheese (I used parmesan)
  • 2 tsbp of butter

STEP BY STEP INSTRUCTIONS:

  1. Preheat your oven to 400 degrees Fahrenheit
  2. Set your bacon on a foil lined baking sheet
  3. Place into preheated oven for 10 minutes
  4. Flip bacon and continue cooking for another 8-10 minutes, make sure you check in to make sure it doesn’t burn (depending on what type of bacon you are using and your oven temperature, timing may vary)
  5. Place washed & sliced baby potatoes onto baking sheet (you can reuse the same sheet with the fat from the bacon – that’s what I did!)
  6. Place in oven for 15-20 minutes, make sure you check
  7. Set aside bacon and potatoes (you can prep these ahead of time)
  8. If cooking frittata immediately, turn the oven up to 425 degrees Fahrenheit
  9. Dice yellow onion
  10. Using a cast iron pan or another oven-safe dish, melt butter in pan
  11. Cook onions until they are translucent, set aside cast iron pan with onions still in the pan
  12. In a mixing bowl, whisk together eggs, heavy cream, salt and pepper
  13. Carefully pour mixture into cast iron pan or oven-safe dish with onions
  14. Fold in bacon, potatoes, and cheese
  15. Place cast iron pan or oven-safe dish in oven and cook for 10-15 minutes
  16. Let cool and enjoy!

One Last Thing

This frittata can be stored in the fridge and eaten for up to 4 days after cooking. Just place a slice into the microwave for around 1 minute and 20 seconds and enjoy.
